Chia Seed Pudding… Where have you been all my life?! I’ve found something I think I could live on. Granted if you can’t fathom eating tapioca or have texture issues with anything related, then this may not be for you. Otherwise, here’s to your health & taste buds! *clink!

21/2c plain almond or coconut milk
1/2 c Chia Seeds
1/2 t vanilla extract
Agave, honey or stevia to taste.

I added cardamom, because I’ll put it in ANYTHING I can, but I can see where you could really play around here. Cinnamon? Raw Cacao? Hmmm…

Add sweetener to ‘milk’ to taste, vanilla & spice (or whatever). Mix and add chia seeds. Let sit in fridge for at least 4 hrs giving a good stir occasionally. Enjoy the hell out of it.
